The beginning
It started with one starter and a lot of stubbornness
In 2015, our founder began baking sourdough in a tiny apartment kitchen using a starter passed down from her grandmother in Poland. What began as loaves for neighbors turned into Butter & Rye — a full bakery built on the same patience and simple ingredients.

Anna Kowalski, Founder & Head Baker
Anna trained in traditional European baking before bringing those techniques home. She still hand-shapes every sourdough loaf herself.
